![]() The Tradition of Winter cooking in Barnaja and Osijek. This past week was the blessing of wine Vinceska and more great food to go with it. In my experience here in Croatia the celebrations and feasts never stop. Every town or city has its own unique differences for sharing customs and their rich cultural Heritage. Traveling in Slavonia Baranja region one just needs to walk on any street and will instantly notice the smells and the fragrance of stew being cooked over an open fire. Family life of cooking out-doors Damir this past week shared some family photos of getting together to cook. The best picture which many can relate to is keeping the boots and feet warm next to the fire. Family time is spent enjoying finding the sticks and branches to cook food over the fire. Cooking traditional smoked bacon and sausage. I can say that I have learned a lot from him in the many conversation of learning Croatian Values.
The guys get together for cooking. For many Croatian cooking outdoors is more of a passion than a chore. There are many weekends were the guys get together to cook the following :Čobanac (Meat stew), Fiš Paprikaš (fish stew), Grah I ivarivah (bean and Stew), and many other well- known dishes in Slavonia Baranjna Region. Many great stories have been told while one waits for the food to be prepared. The other tradition is Sausages freshly made in the fall that are left to cure over the winter. Just after the holidays many Croatians go into their smoke houses to prepare the sausages for the feasts ahead. Cuture in North America Canada For me it is something not used to cooking outside in the winter over an open fire. The winter months are spent at friend’s cottages and with a complete different variety of food. The open fires would be used to cook Hotdogs, Fish and Steak. The treat for some would be Smores (Marshmallows with chocolate place between two granola wafers forming a sandwich) or just plain roasted Marshmallows. ![]() The Canadian lifestyle is different with many culture intertwined, so there is no definitive way to say this is tradition. However Canada's oldest traditional known is the "Maple Syrup Run" served with pancakes dating back to pioneer days. The maple trees are taped for the sap (appearing as watery like substance) as the warm weather start to happen. The tap slowly drips the liquid that runs into the bucket. Only after It’s a long time consuming process of cooking the sap is turned into to maple syrup. (Even that is being challenged with the change in weather.) |
